  • Leudar o levar

    Quisiera saber cuál de estos verbos debe usarse cuando, por ejemplo, se habla de dejar una masa en reposo para que duplique su volumen por efecto de la levadura. En el diccionario de la RAE sólo encontré leudar, donde dice: «Dar fermento a la masa con la levadura». Sin embargo, en la mayoría de los libros de cocina aparece el verbo levar.

    Levar viene del latín levare 'levantar', pero se usa para referirse a 'sacar del fondo y levantar un ancla'. Por este origen etimológico, en gastronomía se ha dado en hablar de levar para denominar el proceso al que específicamente le corresponde el verbo leudar, proveniente de leudo 'masa fermentada con levadura'.
