¿Por qué los artículos son diferentes en estos casos: es decir, el hambre, pero la hambruna?

Respuesta: 

Ambos son sustantivos femeninos. Hambre comienza con /ha/ tónica y debe llevar el artículo el, una forma del artículo la. Hambruna lleva el acento en la segunda sílaba [ambrúna], o sea que la primera a es átona, por esa razón no hay necesidad de cambiar la forma del artículo.
