Quisiera saber si es correcto decir «pude haber comido» y en qué tiempo gramatical se ubica.

Respuesta: 

La construcción es adecuada y remite a una acción que hubiera sido posible en el pasado. Se trata del pretérito perfecto simple del verbo poder usado con valor de posibilidad o probabilidad en la perífrasis «poder + verbo en infinitivo», en la que el verbo en infinitivo desempeña la función de complemento directo de poder. Así, haber comido es c. directo y, a su vez, un infinitivo compuesto; pero la expresión global representa un tiempo del pretérito: Puede haber comido, pero no lo hice.
