¿Por qué a veces es posible encontrar la siguiente forma:"son una gente alegre y abierta"? ¿Es posible usar el verbo en plural, aunque 'gente' esté en singular?

Respuesta: 

Sí, es posible. En oraciones copulativas con ser, el número del sujeto puede no concordar con el del atributo, en cuyo caso el verbo se hace concordar por regla general con el sustantivo plural, aunque es posible hacer la concordancia en singular: Los vecinos son (una) gente alegre y abierta. Nosotros somos gente de paz. La mayoría de los usuarios es menor de edad. Las tortillas de maíz son un alimento básico de muchos países latinoamericanos.
