He buscaso la palabra "ingerencia" en todos los diccionarios y no la he encontrado, entonces, ¿por qué si la palabra "ingerencia" supuestamente no existe en el diccionario, la usan tantas personas? En realidad no sé a qué se refieren cuando la usan.

Respuesta: 

"Injerencia" se escribe con -j- y así aparece en los diccionarios. Por ejemplo, el de la Real Academia (www.rae.es) la define como: "Acción y efecto de injerirse" y el mismo diccionario dice de "injerirse": "Entremeterse, introducirse en una dependencia o negocio". El hablante tiende a asociar la palabra "injerencia" con el verbo "ingerir", que es muy diferente de "injerirse", de ahí que muchas veces se cometa el error ortográfico.
