Debe decirse: a) Luego había uno, uno muy joven QUIEN siempre se levantaba cuando yo llegaba. b) Luego había uno, uno muy joven QUE siempre se levantaba cuando yo llegaba.

Respuesta: 
El pronombre quien solo puede introducir proposiciones explicativas y no especificativas.
Luego había uno, uno muy joven que siempre se levantaba cuando yo llegaba.
 
Para ejemplificar la diferencia de uso, valgan estas oraciones:
Los obreros que estaban cansados no quisieron comer.
Los obreros, que/quienes estaban cansados, no quisieron comer.
