Tengo una duda respecto al uso de «quién» cuando se refiere a una «cosa». el ejemplo concreto es:¿qué es lo que se impone sobre lo otro, la mineralidad o la acidez? *ó¿quién se impone sobre el otro, la mineralidad o la acidez?

Respuesta: 

Quién se refiere exclusivamente a personas. Note que la o, de acuerdo con la normativa vigente, no se tilda en ningún caso.
